An elongated citrus fruit filled with hundreds of little juice pearls.

FINGER LIME is an elongated citrus fruit filled with hundreds of little juice pearls. Finger lime trees originate from the sub-tropical rainforests of northern NSW and Queensland. Their pearls – also known as ‘plant-based caviar’ consist of citric acid, malic acid, lactic acid and glycolic acid. These are some of the same ingredients that are used in cosmetics to hydrate the skin.

The pulp of the citrus fruit, called juice vesicles are pearls that are filled with vitamin-C, they have rich hydration potential and taste like a blend of lemon and lime juice without the sourness.

Finger limes have been used by Indigenous people for medicinal purposes for centuries. The ancient Indigenous knew that native finger limes were an excellent water source that could help conquer or prevent dehydration under the harsh Australian sun and they also used Finger Lime to treat wounds and cuts.

What is Finger Lime known as?
The Australian Finger Lime, Citrus Australasica, belongs to the Rutaceae family.

Culinary uses of Fingerlime:
Finger limes aren’t as common as limes and lemons in stores, the fruit is quite rare but some supermarket outlets do sell them on occasion at various locations. Finger Lime is used to produce sauces, jams or jellies and features well in sweet and savoury dishes and drinks. You can easily purchase Finger Lime Jam or Finger Lime Powder for ease of use in your cooking from online stores such as ours.

Finger Lime pairs well with seafood, white meats, curries, salads and desserts and can be used as a topical garnish or flavour enhancer.
